I just setup the Temp-1 with the short probe with the flatish cable.
The cable is not flat enough so that the rubber seal of the freezer can push it shut. If I have my phone inside and the LED on I can see inside the freezer.
Is there any other compatible probe with a really flat cable? I have one from a Berlinger Fridge Tag 2L but it is not compatible. This one is as flat as I’d expect:

In our testing and with customer feedback we have not seen this across many different fridge/freezer combos. We have seen some customers use tape to really make sure the cable sits as flat as possible against the freezer. I have also seen some kits on amazon and similar websites where it comes with a bit of sticky tape/foam padding to make the fridge seal a bit better.
Please share any updated information on your results with tape or other solutions and I will be happy to get those added to our FAQ on the wiki!

Is there a documentation how many individual cables are in the thick one? Maybe I can connect those from the ultra flat to a 3.5mm jack.
Also protocol et cetera would be helpful.

We use the DS18B20 https://cdn-shop.adafruit.com/datasheets/DS18B20.pdf and there’s a ton of documentation online about this sensor. This uses the “onewire” protocol as shown here in esphome documentation: 1-Wire Bus - ESPHome - Smart Home Made Simple
